Good Fats Part 2

We eat a lot of hot cereal at the Clark house. It's cheap, it's easy, and I'm a big fan of both of those (but you knew that already). Several nights a week, I measure out a bunch of steel cut oats and dump them in the crock-pot with 2.5 times as much water. I add 2 Tbs whey for added nutrition and set the appliance timer to cook my oats from 5-7 am on high. When we wake up in the morning and meander into the kitchen, breakfast is ready and waiting for us. Then I add some organic sugar, cinnamon, and a big spoonful of coconut oil.
Coconut Oil has been found to be one of the most healthful fats that people can eat, and it has powerful antibacterial and antiviral properties. Populations in southeast Asia and the Pacific islands who use coconut oil as the primary source of fat often have less heart disease than people of other regions.

Here's what the yummy stuff looks like in my Mountain Rose gallon bucket (Trust me it's the best bargain I've found anywhere!):
We use coconut oil as a healthy substitute anywhere we would use butter. Remember the cookies I made once upon a time? (Hey, I may not bake very often, but when I do, it's healthy! Well, healthier anyway.)
So go ahead and bake those chocolate chip cookies you love, but make them with coconut oil. Your body will thank you!

Thank you for posting this! I was just planning to make steel cut oats for the kid's breakfast in the morning! I have never made it before, but heard it's great and yummy! Now I'm going to go and start the crock pot!

I have a huge bucket of this stuff but I have found I taste coconut in everything I use the oil in. Blech! Is there anyway to get the taste out?

Love that coconut oil! Yummy. Use it in everything that calls for butter. Yummy in banana bread, yummy in cookies, yummy in pie crusts...

YOu make it sound like that's a bad thing! ;) We all LOVE it!
You can buy expeller-pressed coconut oil, it's flavorless, but virgin coconut oil is really the best.
What are you using it in?

Oh, Ginger, I'm so glad you posted about your oats in your crockpot....I bought some steel cut oats a few weeks ago because I had been told how wonderful they are, but I didn't know how to go about cooking them. I'll have to give your method a try! Thanks!

And I have often wondered about the coconut oil being used in place of at least part of the butter in my cookies. I will definitely have to give that a try, and with Mountain Rose Herbs prices, it is cheaper than butter (I think....will need to see how many pounds are in a gallon :))

The expeller-pressed c.o. is flavorless...that's what I bought after this post--not knowing that it would be flavorless, but I plan to get the other stuff as soon as your fav. website for it has it back in stock! I want to try the flavor.
