The Why & How of Kefir, oh and A Contest!

The exceptional nutritional content of Kefir offers a wealth of healthy benefits to people in every type of condition. More than just beneficial bacteria, Kefir contains minerals and essential amino acids that help your body with its natural healing powers and maintenance functions.

Around the Clark household, we drink kefir smoothies almost daily. Here's one of our favorite recipes:

You'll need:
a handful of strawberries
4 or 5 large peach slices
1 banana
about 3 cups of kefir

Pour the cold kefir over the fruit.

Then blend to your heart's content.

Look at that pink goodness! Yummy!

Healthy Orange Smoothie
2-3 oranges, scored and peeled, leaving as much pith as possible
4 cups kefir
1/2 cup honey,, to taste
healthy squirt of flax seed oil
2-3 tsp vanilla
ice to desired thickness

Orange Julius Smoothie
1 can OJ concentrate
1 cup sugar
2 cups kefir
2 cups raw milk
2 tsp vanilla
1 cup ice
1 cup water

Blend till smooth
Blend together till smooth.

How in the world do you get that blue bottle clean?

Oh we put pineapple and strawberry in ours. And those don't look like organic fruits to me.

Today's smoothie was

1 ripe cantaloupe, seeds too
2 bananas
3 cups kefir
1/2 c honey
big ol' heaping spoonful of coconut oil

Very tropical. Have to let the Vitamix blend longer than usual to take care of the seeds. The kids made it up, so they liked it especially well. I don't like that much cantaloupe, but that's just me.

Here's a couple of kefir sweeties~

Cocoa Kefir:

1 Tbsp of your favorite HOT CHOCOLATE POWDER*
1 cup Vanilla Kefir

Whisk ingredients together. To develop a richer flavor, let the mixture stand at room temperature for 10-15 minutes before drinking, then stir and enjoy!

*Ghirardelli Double Chocolate cocoa mix is rich and chocolaty, not very sweet, and made to be mixed into milk, so it's perfect for this.

Iced Chai:

1/4 cup favorite liquid Chai, refrigerated
3/4 cup Kefir

Stir together. Enjoy over ice.

Our favorite smoothie is kind of a throw together.

I use kefir and a little bit of raw milk to make a bit more liquidy.
I throw in frozen berries or peaches, a little honey, some flax oil, and some coconut oil.

Sorry thats the best I have so far, though I did pick up a smoothie book at our library sale. Its on my to look through list. :)

Kefir Pina Colada:

2 cups kefir
1/2 cup diced pineapple, frozen
1/4 cup pineapple juice
1/4 cup coconut cream

Blend well. Garnish with a slice of pineapple. Enjoy!

Ooh, we love all sorts of kefir smoothies, but here is what we've been doing lately.

Strawberry-Banana Kefir Smoothie:
2 c. Kefir
1 banana (organic)
1 c. Strawberries (organic)
1 1/2-2 T. Coconut Oil
2 T. Flaxseed Oil
1/4 t. Stevia
handful (4) ice cubes
Blend and serve.
Sometimes I add brewer's yeast to mine, but it really has a strong flavor.
